Cook

If you're an experienced line or catering cook and are able to prepare a variety of foods that are both appealing to look at and tasteful to eat, then it’s time for you to join our family. As a cook, you get to engage your creative side with new recipes, food arrangements and menus. You'll be asked to multi-task as you prepare all dishes to order and for events.

Our family is looking to add a new Cook who will be responsible for preparing absolutely delicious dishes for our guests. Duties include prepping meals by weighing, measuring, and mixing ingredients, cooking meals, checking ingredients for freshness, and arranging and garnishing the dishes. You will also be in charge of ensuring that the kitchen and equipment are properly cleaned and maintained.

WE'RE LOOKING FOR:

  • Excellent knowledge and practice of hot and cold food preparation

  • Previous experience as a busser, dishwasher, server, cook, or relevant work experience

  • Able to work in a fast-paced environment

  • Ability to multitask, prioritize, and manage time efficiently

  • Physical endurance to stand, move, bend and kneel throughout an entire shift

  • Self-motivated and self-directed

  • Works well as part of a team and on individual tasks

  • Able to quickly memorize complex or multiple orders

REQUIREMENTS:
The skills & duties you'll perform:

  • Line + Prep + Dish duties

  • Set up, stock, organize, and clean work stations and equipment

  • Quickly prepare all food items during assigned work hours

  • Prepare food for service (e.g. dicing vegetables, butchering meat, or preparing sauces)

  • Prepare a variety of meats, seafood, poultry, vegetables, dairy, and other food items a variety of tools and equipment (e.g. knives, mixers, immersion blenders, food processors, slicers, scales, and portion bags)

  • Process prepared foods for service using kitchen equipment (e.g. ovens, gas stoves, griddles, or kettles)

  • Assume responsibility for quality, food safety/sanitation and timeliness of products served

  • Ensure food comes out simultaneously, in high quality and in a timely fashion

  • Ensure each item is cooked to the company specifications

  • Garnish each dish properly

  • Maintain a clean, organized, and sanitary work station area (i.e. tables, shelves, kettles, sauté burners, ovens, flat top griddles, refrigeration equipment, etc...) both during and after service

  • Possess knowledge of & follow proper food service/handling, kitchen equipment, & safety/sanitation regulations

  • Follow recipes, portion controls, and presentation specifications

  • Transport up to 60 pounds on occasion and up to 35 pounds regularly

  • Thoroughly, quickly, and properly clean, sanitize, and restock all dishes, glassware, utensils, and pots

  • Maintain, organize, and clean dish room/machine

  • Operate dish machine, chemicals, and sanitizer to company and manufacturer specifications

  • Remove all garbage

Support Staff (Dishwasher)

Busser:

  • Assist with clearing tables, refilling drinks, and restocking clean plates, silverware, and glassware

  • Reset tables according to specifications

  • Set up and break down dining room for each shift

  • Maintain service stations in a clean and orderly manner throughout shift

  • Perform opening and closing side work, as required

  • Accept direction from servers

Host:

  • Excellent telephone and guest etiquette

  • Accurately record reservations

  • Knowledgeable of food and beverages served

  • Understand mechanics of service, manage tables, and can arrange tables for large parties

  • Accept direction from servers

Caterer:

  • Transports all materials to and from the event area, following all health and safety qualifications for food and serving ware

  • Sets up, decorates, and prepares serving and dining areas according to specific directions and layout plans established by the catering manager

  • Cleans, washes, peels, and cuts fruits, vegetables, and other food for optimal presentation

  • Prepares food in an attractive and appetizing way according to the caterer’s directions and serves the food with appositive and courteous demeanor

  • Addresses immediate customer concerns, questions and needs in order to provide an optimal experience

  • Breaks down serving and dining areas

  • Cleans and sanitizes all equipment, utensils, dining ware, linens, serving ware, and work areas

  • Restocks clean equipment, utensils, and equipment to proper storage areas noting any damages and items to be replaced

  • Use proper grammar

  • Maintain a positive and infectious attitude.

Catering Manager/Director

Are you good at, and do you take charge in, the planning, organization, and execution of get-togethers? Are you passionate about meeting/exceeding the needs of others? If so, a catering position with our family might just be for you! The main responsibilities include consulting with clients to determine their catering needs and then facilitating all aspects of catering the event. 

Catering managers take part in ensuring that the client’s needs are followed through and completed before, during, and after the event. When doing so, the catering manager completes necessary forms, negotiates prices, pulls and transports goods and supplies, organizes the venue and how services will be performed and provided by catering staff. 

WE'RE LOOKING FOR:

  • Excellent organizational and communication skills.

  • Keen eye for detail.

  • Extensive knowledge of the food industry (or willingness to self-teach/learn).

  • Willingness to travel to local events (typically in company vehicles).

  • Maintain valid drivers license with clean record & insurance.

  • Basic computer/phone/printer skills.

  • Standard restaurant managerial schedule (every Friday, Saturday, and Sunday, with only occasional weekends off; schedule will likely vary based on booked catering events; work all holiday weekends; 50-60 hours per week typical).

  • Though we value your personal time off, answering afterhours calls and last minute schedule changes are to be expected.

REQUIREMENTS:

EVENT PREPARATION:

  • Design/create/submit menus for events.

  • Promote/sell the restaurant’s product offerings

  • Conduct advanced tastings and practice runs, as warranted, to ensure client expectations are met.

  • Finalize menu items and head counts before the event.

  • Pull/organize/source equipment and ingredients needed for every menu item/event.

EVENT MANAGEMENT:

  • Schedule/gather/maintain/communicate event details

  • Transport & organize the transport of food/tables/items needed to cater events.

  • Ensure all catered events are presented well, and run smoothly and efficiently.

  • Assist with & supervise the clean up of events to guarantee that no items are left behind.

INVENTORY & EQUIPMENT MANAGEMENT:

  • Assume responsibility for quality/food safety/sanitation/timeliness of products received/served.

  • Ensure health and safety regulations are strictly observed/recorded/archived.

  • Inspect supplies/equipment/work areas to ensure conformance to standards.

  • Arrange for equipment purchases & repairs (pre-authorize).

CATERING MANAGEMENT:

  • Lead/coordinate all aspects of catering.

  • Demonstrate new catering techniques and equipment to staff.

  • Recruit/schedule employees to work catering events.

  • Manage all individuals involved with the preparation, cooking, and presentation of catered events to ensure the event goes smoothly and efficiently.

  • Report/communicate production and operation data to superiors.

GENERAL MANAGEMENT:

  • Establish/keep/enforce accurate procedures & standardized work (collaborate with peers/staff).

  • Cultivate/maintain vendor relations.

  • Use proper grammar, spelling, and punctuation when reviewing and/or editing documents for accuracy and completeness.
